Easy Chicken-Rice Dinner

- 3/4 lb. boneless chicken breast (strips/tenders)
- 1 Tbsp. vegetable oil
- 1/4 c. chopped onion
- 1 clove minced garlic
- 1 (5 oz.) pkg. saffron yellow rice
- 1/4 c. each: frozen green peas, diced green pepper and diced red pepper
- 1 3/4 c. water
Directions

1In large skillet with cover, brown chicken strips in oil. Remove chicken and reserve.

2Add onion, garlic, rice and vegetables to skillet.

3Saute lightly; add water and bring to boil.

4Stir well; add chicken and lower heat to simmer.

5Cover and cook for about 20 minutes or until done.

6May add more water near end of cooking time if you prefer a more moist dish.
