- 1 (12 oz.) jar apricot preserves
- 1/4 c. Dijon-style mustard
- 1 tsp. curry powder
- 4 skinned boned chicken breast halves
- 1 c. finely chopped lightly salted cashews
Directions

1In a small saucepan, combine apricot preserves, mustard and curry powder.

2Cook over low heat, stirring constantly, until preserves are melted.

3Dip chicken in apricot mixture, then roll in cashews.

4Place chicken in a greased 15 x 10 x 2-inch baking pan.

5Bake in a preheated 375° oven for 15 to 20 minutes, or until chicken is done.

6Bring remaining sauce to a boil.

7Serve sauce with chicken.
