- 2 c. fresh white bread crumbs
- 2 eggs, beaten
- 1/4 c. chopped parsley
- 1/4 c. chopped scallions (all)
- 1/2 tsp. dried dill
- 1 tsp. lemon juice
- 1/4 tsp. black pepper
- 2 (7 oz.) cans salmon, drained
- 2 to 3 Tbsp. butter
Directions

1Place 1 1/2 cups bread crumbs in large mixing bowl.

2Set aside remaining 1/2 cup.

3In bowl, add eggs, parsley, scallions, dill, lemon juice and pepper; mix well.

4Add salmon and mix with hands, breaking up pieces.

5Form salmon mixture into 8 patties, 1/2-inch thick.
