Easy Egg Rolls

- 20 -25 egg roll wraps
- 1 lb baby carrots, minced
- 4 jalapenos, chopped
- 2 lbs ground chicken
- 4 garlic cloves, minced
- 1 medium onion, minced
- handful fresh parsley, minced
- vegetable oil (for frying)
Directions

1In a food processor/mincer, combine all ingredients except for ground chicken.

2Brown the ground chicken in pan with vegetable oil.

3Drain grease, then add all minced veggies with the chicken.

4Stir all together to form your eggroll mixture.

5Start wrapping eggrolls, put mixture towards bottom of eggroll, roll up and tuck in sides.

6Fry in skillet or pan with vegetable oil.

7Serve.
