Easy Enchilada Casserole

- 1 lb. lean ground beef
- 1/2 c. frozen chopped onion
- 1 (8 oz.) can drained whole kernel corn
- 1 (8 oz.) can tomato sauce
- 2/3 c. mild enchilada sauce or mild salsa
- 1 (4 oz.) can diced green chili peppers, drained
- 1/2 tsp. chili powder
- 1/4 tsp. salt
- 10 (6-inch) corn tortillas
- 1 c. shredded Cheddar cheese
Directions

1Brown ground beef and onion over medium heat until meat is no longer pink.

2Drain off fat.

3Stir in corn, tomato sauce, enchilada sauce or salsa, green chili peppers, chili powder and salt into meat mixture.

4Cook until bubbly.

5Spoon 1/3 of meat mixture into bottom of 2 quart rectangular baking dish.

6Place 5 tortillas on top.

7Spoon 1/2 of remaining meat mixture over tortillas.

8Sprinkle 1/2 of cheese over meat.

9Repeat with remaining tortillas, meat and cheese.

10Bake at 350° for 20 to 30 minutes or until hot all through.
