Easy Enchilada Casserole

  • 1 1/2 lb. ground meat or turkey, drained and seasoned with 1 pkg. taco seasoning or 1 chicken, boiled, deboned and chopped
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can diced Ro-Tel tomatoes
  • 1 (8 oz.) bag tortilla chips
  • 1 lb. grated Cheddar cheese

Directions

    Mix together in a very large bowl meat, soups and tomatoes. (This part can be done ahead of time and left in refrigerator, even overnight.)

    Carefully fold in the chips.

    Spread in a 9 x 13-inch baking dish and top with grated cheese.

    Bake in a 350° oven for 20 to 25 minutes, until good and hot and cheese is melted.
