  • 1 lb skirt steak
  • 1 ounce tequila
  • 2 tablespoons balsamic vinegar
  • 14 cup olive oil
  • 1 tablespoon horseradish
  • 2 garlic cloves
  • 1 tablespoon oregano
  • 18 cup brown sugar
  • 2 tablespoons liquid smoke
  • 1 jalapeno, chopped
  • 1 lemon, juice of
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 garlic clove
  • 12 mini flour tortillas
  • 1 cup sour cream
  • 23 cup picante sauce
  • 1 garlic clove, chopped
  • chopped tomato
  • shredded lettuce
  • diced avocado
  • 2 cups colby-monterey jack cheese, shredded

Directions

    In a large resealable bag, place meat, Tequila, 1/4 C olive oil, horseradish, liquid smoke, basalmic vinegar, 2 cloves garlic, adobo, oregano, brown sugar, liquid smoke, chopped jalapeno, and lemon juice.

    Marinate meat overnight, turning once.

    Reserve marinade.

    Grill meat over medium hot coals about 4 minutes per side.

    Take meat off grill and let rest 10 minutes before slicing into strips about 1 inch wide.

    Pour marinade into a skillet on the stovetop and add veggies and 1 T olive oil.

    Saute until crisp tender, about 6-8 minutes.

    For sauce:.

    Mix sour cream, 1 clove garlic, cumin, and 2/3 C picate sauce in a small bowl.

    Heat 12 flour tortillas in the microwave until just warm.

    Serve flour tortillas with veggies, picante/sour cream sauce, avocados, tomatoes, lettuce, and cheese.
