Easy Fruit Cake

Ingredients

  • 1 c. sugar
  • 1 1/4 c. water
  • 1/3 c. shortening
  • 1 c. raisins
  • 2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 c. fruit cake mix or other dried fruit
  • 1/2 c. chopped nuts
  • honey
  • candied cherry halves or nut pieces

Directions

    Bring sugar, water, shortening and raisins to a boil.

    Let cool a little. Add flour, soda and salt.

    Stir to mix. Add fruit cake mix and chopped nuts. Grease a loaf pan. Cut waxed or brown paper to fit bottom of pan and grease again.

    Pour batter in pan and bake at 325° for 1 hour or until done. Remove from pan and remove paper. Glaze with honey and decorate with cherries or nuts.
