- 2 sticks butter
- 5 egg yolks
- 1 Tbsp. lemon juice
- dash of white pepper or cayenne
Directions

1Melt butter over medium heat and keep hot until used.

2Put yolks in blender with lemon juice.

3Blend on low speed 10 seconds. Remove bubbling butter from heat and pour in thin stream into blender on low.

4Blend 1 minute or more to cook eggs.

5Add pepper.
