- 1 lb. skinned, boned chicken breasts, cut into 1-inch chunks (1 1/2 ok)
- 2 Tbsp. cornstarch
- 2 Tbsp. soy sauce
- 1 tsp. ground ginger
- 1 clove garlic, minced
- 1/2 tsp. salt
- 2 Tbsp. cooking oil
- 1/4 c. firmly packed brown sugar
- 1/4 c. cider vinegar
- 1 can pineapple chunks (optional, to taste)
Directions

1Combine chicken, cornstarch, soy sauce, ginger, garlic and salt.

2Heat oil in skillet over medium heat.

3Add mixture; cook for 3 minutes.

4Add brown sugar, vinegar and 1/4 c.

5water. Cover; simmer for 10 minutes, stirring often.

6Add pineapple to chicken mixture; continue cooking, uncovered, for 10 minutes more. Ready!
