  • 1 lb. hamburger
  • 1 (16 oz.) can refried beans
  • 2 cans enchilada sauce
  • 1 pkg. tortillas (soft)
  • 1 can mushrooms, sliced
  • 1 can diced tomatoes
  • 1 can cream of chicken soup
  • 26 oz. shredded cheese

    Preheat oven to 350°. Brown hamburger. Drain fat. Mix together hamburger, refried beans, enchilada sauce, olives, mushrooms and tomatoes. Spoon some of the mixture into each tortilla, making it the size you want; fold each one and put in a pan. Mix the soup in a separate bowl with a little water or milk, about 1 1/2 cups. Pour over enchiladas. Cover with cheese. Bake for 20 to 30 minutes. Garnish with sour cream.
