- 1 pkg. frozen chopped broccoli, spinach or asparagus spears, cooked and drained
- 1 c. dairy sour cream
- 1 c. creamed cottage cheese
- 1/2 c. Bisquick baking mix
- 1/4 c. margarine, melted
- 2 eggs
- 1 tomato, peeled and thinly sliced
- 1/4 c. grated Parmesan cheese
Directions

1Grease a 9 x 1 1/4-inch pie plate.

2Spread broccoli or spinach or asparagus in plate.

3Beat sour cream, cottage cheese, baking mix, margarine and eggs until smooth (15 seconds in blender on high).

4Pour into plate.

5Top with tomato and sprinkle with Parmesan cheese.

6Bake at 350° until knife inserted in center comes out clean (about 40 minutes).

7Cool 5 minutes and serve. Makes 6 to 8 servings.
