Easy Scalloped Potatoes and Ham

- 4 lbs potatoes, cut into 1/4 inch slices
- 450 ml light sour cream
- 1 cup lowfat parmesan cheese, shredded
- 12 cup green onion, sliced
- 250 g ham, sliced
Directions

1Preheat oven to 350 degrees.

2Spray 13 x9 inch dish with cooking spray.

3Place potatoes in large sacuepan; cover with water.

4Bring to boil on high heat, reduce to low heat and cover.

5simmer 10-12 minutes or until tender.

6Drain potatoes.

7Return potatoes to saucepan.

8Transfer 1/4 of the potatoes to a large bowl, add sour cream; mash with potato masher.

9Add cream cheese, ham and green onions and mix lightly.

10Add mashed potato mixture to potato slices in saucepan.

11Stir gently, spoon into prepared baking dish and sprinkle with parmesan cheese if desired.

12Bake 30 minutes or until heated through.
