- 4 Yellowtail filets
- 2 tbsp Soy sauce
- 2 tbsp Mirin
- 1 tsp Sugar
- 360 ml Water
Directions

1Pour hot water over the fish or dip the fish in a pot of boiling water.

2If the fish turns white, it's ready.

3Pour all the ingredients and water into a pot and turn on the heat.

4When it comes to a boil, add the fish and cover with a drop lid (otoshibuta).

5Simmer in medium heat until the sauce reduces by 1/2 to 1/3.

6Remove the lid and pour the sauce over the fish with a ladle.

7Simmer in low heat for 1 to 2 minutes.

8When the fish turns shiny, it's done.
