Easy Spanish Rice

Ingredients

  • 2 tablespoons bacon grease or 2 tablespoons other cooking oil
  • 1 cup long grain rice (we use jasmine )
  • 1 12 teaspoons chili powder
  • 1 teaspoon salt
  • 14 teaspoon cumin
  • 12 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 medium onion, chopped
  • 1 (8 ounce) can tomato sauce or 1 cup , chopped fresh or 1 cup canned tomato
  • 2 cups chicken stock or 2 cups vegetable stock

Directions

    Heat oil in a large pan that has a tight fitting cover.

    Add rice and saute over medium heat until the grains are starting to become translucent.

    Add onion then saute a few minutes more.

    When the onion is soft add the spices, stirring to mix in well, add the stock then tomatoes.

    When it comes to a boil put on the lid and turn heat to low.

    Cook time is around 20 minutes.Keep covered until done.
