  • 1 large watermelon, cut into small pieces
  • 2 cucumbers, seeded, cut into small pieces
  • 1 large red onion, sliced thin
  • 3 cups seedless grapes, white or red, halved
  • 1 lb. prossuito, sliced thin
  • goat cheese, crumbled, to taste
  • 2 bunches of flat-leaf parsley
  • 3 limes
  • 2 small packages of sunflower seeds
  • extra-virgin olive oil
  • white wine vinegar

Directions

    Slice red onions and marinate, overnight, in lime juice and salt. In a large bowl, add watermelon, cucumbers, grapes, prossuito, red onions, parsley, and sunflower seeds. Mix thoroughly. Drizzle olive oil and add salt. Drizzle a bit of white wine vinegar, to taste. Crumble goat cheese, to taste. Toss. Squeeze remaining lime juice over salad to taste.
