Ingredients
- 1/2 c. butter
- 1 c. sifted all-purpose flour
- 1/4 tsp. salt
- 4 eggs
Directions

1Melt butter in 1 cup boiling water.

2Add flour and salt all at once; stir vigorously.

3Cook and stir until mixture forms a ball that doesn't separate.

4Remove from heat; cool slightly.

5Add eggs, one at a time, beating after each until smooth.

6Put through a pastry tube or paper one making 4-inch strips, 3/4-inch wide on greased cookie sheet.

7Bake, split and dry.

8Bake in 450° oven for 15 minutes, then at 325° for 25 minutes.

9Turn oven off and put eclairs back in to dry, about 20 minutes.

10Cool on rack.

11Fill with double recipe of French Custard Filling just before serving and frost with Chocolate Frosting.
