  • 3 large eggs, beaten slightly
  • 1/2 c. sugar
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla
  • 3 c. milk, scalded
  • nutmeg

Directions

    Preheat oven to 415°.

    Mix eggs, sugar, salt and vanilla. Pour into scalded milk and stir well.

    Pour into unbaked pie shell and sprinkle with nutmeg.

    Bake for 15 minutes.

    Reduce heat to 350° and bake about 20 minutes longer or until custard is set.

    Test with a knife an inch or so from the center of the pie.
