- 2 tbsp vegetable oil
- 5 None eggs, lightly beaten
- 6 slices bacon, finely chopped
- 2 cloves garlic, minced
- 22.5 oz cold, cooked jasmine rice
- 12 oz frozen mixed vegetables
- 2 tbsp soy sauce
- 2 tbsp Chinese barbecue sauce (optional)
- 4 None spring onions, thinly sliced on a bias
Directions

1Heat 1 tbsp oil in a medium nonstick frying pan over high heat. Add eggs, swirling to coat base. Cook until just set. Remove from heat, roll up and slice.

2Heat remaining oil in a wok. Stir-fry bacon and garlic for 3-4 mins, until golden. Add rice, mixed vegetables, soy sauce and barbecue sauce, if using. Stir-fry for 2-3 mins, until heated through. Add omelette and spring onions, stirring until combined.
