Egg Pancake

Ingredients
- 1/2 c. flour
- 1/2 c. milk
- 2 eggs, slightly beaten
- pinch of nutmeg
- 2 to 4 Tbsp. butter or margarine
- powdered sugar
- juice of 1/2 lemon or lime
- lingonberries
Directions

1Preheat oven to 425°.

2Mix flour, eggs, milk and nutmeg together.

3Batter will be lumpy.

4Melt butter in a large frying pan.

5(I find that an iron frying pan works well).

6Add batter. Bake 15 to 20 minutes until pancake is nicely brown and puffy. Remove from pan to warm plate and spread with a couple tablespoons of lingonberries; sprinkle with lemon or lime juice over the berries and sprinkle the whole pancake with powdered sugar.

7Eat! You will think you died and went to heaven!
