  • 4 to 5 eggs (hard-boiled)
  • 1/2 c. celery, chopped
  • 1/2 c. green olives, sliced
  • 1/4 c. red onion (optional)
  • 1/2 c. mayonnaise
  • 1 tsp. Dijon-style mustard
  • salt and pepper to taste

Directions

    Peel and mash eggs, using a fork or potato masher.

    Add remaining ingredients and mix gently.
