  • 3 c. raw eggplant, diced about 1/2 size
  • 1/2 c. chopped onion
  • 1/4 c. chopped green pepper
  • 2 1/2 c. diced tomatoes
  • 3 Tbsp. butter or vegetable oil
  • flavor to suit with garlic

Directions

    Put onion and pepper in hot oil and brown slightly.

    Add eggplant and garlic; cook a few minutes.

    Add tomatoes.

    May also be baked for 30 minutes.
