- 1 medium eggplant, peeled and diced
- 1/2 onion, chopped
- 1/2 c. grated cheese (sharp)
- 1 egg
- 2 tsp. margarine
- 1 c. milk
- 1/2 small bell pepper
- 2 slices toast
- salt and pepper to taste
- dash of Tabasco sauce
- dash of Worcestershire sauce
Directions

1Boil eggplant until tender and drain well.

2Add margarine and milk.

3Crumble toast into the mixture; add other ingredients with salt and pepper to taste.

4Add a dash of Tabasco sauce and Worcestershire sauce.

5Grate a small amount of cheese on top. Bake at 350° for 30 minutes.
