Eggplant Casserole

Ingredients

  • 1 medium eggplant, peeled and diced
  • 1/2 onion, chopped
  • 1/2 c. grated cheese (sharp)
  • 1 egg
  • 2 tsp. margarine
  • 1 c. milk
  • 1/2 small bell pepper
  • 2 slices toast
  • salt and pepper to taste
  • dash of Tabasco sauce
  • dash of Worcestershire sauce

Directions

    Boil eggplant until tender and drain well.

    Add margarine and milk.

    Crumble toast into the mixture; add other ingredients with salt and pepper to taste.

    Add a dash of Tabasco sauce and Worcestershire sauce.

    Grate a small amount of cheese on top. Bake at 350° for 30 minutes.
