Eggplant Casserole

Ingredients

  • 2 large eggplants, about 3 lbs.
  • 3 c. spaghetti sauce, Ragu garlic and mushrooms
  • salt and pepper to taste
  • 1 medium onion, chopped
  • 1/2 tsp. cayenne pepper
  • 1 c. Italian bread crumbs
  • 1 1/2 c. cheese of your choice, grated and divided
  • 1 1/2 lbs. ground chuck

Directions

    Peel eggplants, cube and boil until tender.

    Drain and mash. Saute ground meat with onion until no longer pink.

    In large bowl, mix all of the ingredients, except 1/2 c. cheese for topping. Pour mixture in 9-inch x 13-inch pan sprayed with Pam.

    Top with remaining cheese. Bake at 350° about 25 minutes until set.
