Ingredients
- 2 large eggplants, about 3 lbs.
- 3 c. spaghetti sauce, Ragu garlic and mushrooms
- salt and pepper to taste
- 1 medium onion, chopped
- 1/2 tsp. cayenne pepper
- 1 c. Italian bread crumbs
- 1 1/2 c. cheese of your choice, grated and divided
- 1 1/2 lbs. ground chuck
Directions

1Peel eggplants, cube and boil until tender.

2Drain and mash. Saute ground meat with onion until no longer pink.

3In large bowl, mix all of the ingredients, except 1/2 c. cheese for topping. Pour mixture in 9-inch x 13-inch pan sprayed with Pam.

4Top with remaining cheese. Bake at 350° about 25 minutes until set.
