  • 2 pounds hamburger, browned
  • 1 eggplant, peeled
  • 2 cans mushroom soup
  • 1 can evaporated milk
  • 1 large onion, chopped
  • 2 - 8 ounce pack Monterey Jack cheese, grated
  • salt and pepper to taste
  • 1 cup water

    Slice eggplant, coat with flour and fry until brown. In oblong baking dish, place a layer of fried eggplant, hamburger, onion and cheese. Keep layering those things until used up. Mix soup, water and milk together and pour over all. Bake 1 hour at 425°.
