Eggplant Casserole

- 1 large eggplant
- 1 green pepper
- 1 onion, chopped
- 3 stalks celery, chopped
- 3 Tbsp. butter
- 1 hard-cooked egg
- 3 cooked chicken livers
- 1 raw egg
- 2 Tbsp. bread crumbs
- pinch of cayenne pepper
- salt and pepper
- cracker crumbs
- butter
Directions

1Boil eggplant in salted water; drain and mash.

2Saute green pepper, onion and celery in butter.

3Add eggplant and cook five minutes.

4Grate hard-cooked egg and chop livers; add to mixture. Stir in raw egg, bread crumbs, cayenne and salt and pepper to taste.

5Cook a few minutes.

6Sprinkle top with cracker crumbs and dot with butter.

7Bake 40 to 45 minutes at 375°.

8Serves 4.
