Pineapple Nut Bread

  • 2 c. sifted flour
  • 1/2 c. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. raisins
  • 1/2 c. walnuts
  • 1 egg, beaten
  • 1 tsp. vanilla
  • 2 Tbsp. melted shortening
  • 1 c. crushed pineapple, not drained
  • 1 tsp. baking soda

Directions

    Sift flour, sugar, baking powder and salt in a bowl. Add raisins

    and walnuts. Combine egg, vanilla and melted shortening. Dissolve soda in pineapple and add.

    Stir just enough to mix well. Pour into greased loaf pan and bake 1 hour or until done at 350°. Wrap in foil for freezing.
