- 1 medium green pepper
- garlic salt to taste
- 1 can diced tomatoes or fresh
- 2 oz. croutons (garlic)
- 6 oz. farmers or other low-fat cheese
- Parmesan cheese
Directions

1Using Pam saute eggplant, onion and green pepper.

2Transfer to casserole dish.
