Ingredients
- 2 medium eggplant, peeled, chopped and boiled until tender
- 1 lb. lean ground beef
- 1 can Ro-Tel tomatoes
- 1/2 c. chopped onions
- 1/2 c. chopped celery
- 1 c. chopped bell pepper
- 1 clove garlic, chopped
- 1 Tbsp. olive oil
- 2 to 3 c. cooked rice
- onions tops and parsley to taste
- seasoning to taste
Directions

1Heat olive oil in pot until hot.

2Brown ground beef.

3Add seasonings and cook about 10 minutes.

4Add Ro-Tel and cook five minutes.

5Add boiled eggplant and about 1 1/2 cups of water.

6Cook on low fire for about 1 hour.
