  • 1 medium eggplant
  • 1 c. chopped fresh tomato
  • 1/2 c. chopped onion
  • 1/4 c. chopped green pepper
  • 1/4 c. chopped stuffed olives
  • salt and pepper to taste
  • 1/2 tsp. rosemary
  • stale egg bread
  • 1 c. grated cheese (Cheddar)
  • 1/2 c. melted butter

Directions

    Slice eggplant in thin slices and sprinkle with salt.

    Mix tomato, onion, green pepper, olives and salt and pepper to taste. Add rosemary and mix well.
