- 1 large eggplant
- 1 1/2 c. grated cheese
- 2 eggs
- 1/2 tsp. salt
- 1 Tbsp. butter
- 3/4 c. milk
- 12 saltine crackers, crumbled (Ritz)
Directions

1Peel eggplant, slice and cook in salted water until tender; drain.

2Mash eggplant.

3Add 1 cup cheese and butter.

4Let melt. In 1 1/2-quart baking dish, mix crackers, milk, eggs and salt. Add eggplant mixture and mix well.

5Sprinkle rest of cheese on top.

6Bake at 400° for 30 minutes.
