  • eggplant
  • egg
  • 1 Tbsp. butter
  • crushed crackers
  • milk
  • 1 c. grated cheese
  • salt and pepper

Directions

    Cook eggplant until tender in salted water. Drain real good and dump in bowl. Salt and pepper. Beat egg and put in 1 tablespoon butter, crushed crackers, milk and 1 cup grated cheese. Mix all together. Not real soupy, but like a cake batter. Bake at 350° until it bubbles (30 minutes to 1 hour).
