- 1 eggplant
- 2/3 c. milk
- 1 3/4 c. crushed crackers
- 1 1/2 c. grated cheese
- 1 can cream of chicken soup
- 1 small onion, chopped
- 2 eggs
- 3/4 c. margarine, melted
- salt and pepper to taste
Directions

1Cook and drain eggplant. Beat eggs and milk together.

2Add eggplant, onion, salt, pepper and soup.

3Mix this with half of the crackers, margarine and cheese.

4Cook about 30 minutes at 350°. Add cheese and rest of crackers coated with margarine.

5Cook until brown.
