Eggplant Casserole

  • 1 eggplant
  • 2/3 c. milk
  • 1 3/4 c. crushed crackers
  • 1 1/2 c. grated cheese
  • 1 can cream of chicken soup
  • 1 small onion, chopped
  • 2 eggs
  • 3/4 c. margarine, melted
  • salt and pepper to taste

Directions

    Cook and drain eggplant. Beat eggs and milk together.

    Add eggplant, onion, salt, pepper and soup.

    Mix this with half of the crackers, margarine and cheese.

    Cook about 30 minutes at 350°. Add cheese and rest of crackers coated with margarine.

    Cook until brown.
