  • 1 eggplant
  • 1 medium onion, chopped
  • 2 Tbsp. butter, melted, or margarine
  • 2 eggs, slightly beaten
  • 1 1/2 c. sweet milk
  • 1/4 tsp. salt
  • pepper to taste
  • 1/2 c. sharp cheese, grated
  • 1/2 c. cracker crumbs

Directions

    Cook eggplant and onion in boiling water for 10 minutes, covered.

    Drain and mash.

    Add margarine, eggs, milk and seasoning; mix.

    Pour into slightly greased casserole dish.

    Combine cheese and bread crumbs as a topping.

    Bake for 25 minutes at 375° or until light brown.
