- 1 eggplant
- 1 medium onion, chopped
- 2 Tbsp. butter, melted, or margarine
- 2 eggs, slightly beaten
- 1 1/2 c. sweet milk
- 1/4 tsp. salt
- pepper to taste
- 1/2 c. sharp cheese, grated
- 1/2 c. cracker crumbs
Directions

1Cook eggplant and onion in boiling water for 10 minutes, covered.

2Drain and mash.

3Add margarine, eggs, milk and seasoning; mix.

4Pour into slightly greased casserole dish.

5Combine cheese and bread crumbs as a topping.

6Bake for 25 minutes at 375° or until light brown.
