  • 1 beaten egg
  • 1 c. grated cheese
  • 1/2 c. milk
  • 1 onion, sauteed

    Mix the eggplant, stuffing mix, egg, cheese, milk and onion; mix well together.

    Pour into a casserole dish.

    Top with 1/2 cup stuffing mix.
