Eggplant Dressing

  • 4 c. peeled, cubed eggplant
  • 1/3 c. milk
  • 1 can cream of mushroom soup
  • 1 egg, slightly beaten
  • 1/2 c. onion, chopped
  • 1 1/2 c. herb stuffing mix (reserve enough for topping)
  • 1/4 tsp. salt
  • 1 lb. butter or margarine

Directions

    Cook eggplant.

    Combine all together remaining ingredients. Spoon into casserole dish.

    Sprinkle reserved stuffing mix on top. Bake at 350° for 25 minutes.
