- 4 c. peeled, cubed eggplant
- 1/3 c. milk
- 1 can cream of mushroom soup
- 1 egg, slightly beaten
- 1/2 c. onion, chopped
- 1 1/2 c. herb stuffing mix (reserve enough for topping)
- 1/4 tsp. salt
- 1 lb. butter or margarine
Directions

1Cook eggplant.

2Combine all together remaining ingredients. Spoon into casserole dish.

3Sprinkle reserved stuffing mix on top. Bake at 350° for 25 minutes.
