- 1 lb. ground meat
- 1 large bell pepper
- 1 c. celery
- 1 large onion
- 1 c. cooked rice
- salt and pepper
- 1 large eggplant (I use purple)
Directions

1Brown meat; set aside.

2Peel and cut up eggplant.

3Cover with water.

4Cook until tender.

5Saute bell pepper, celery and onion. Drain eggplant.

6Mix all with ground meat and rice.

7Put in casserole.

8Bake 20 minutes at 300°.
