Eggplant Moussaka

Ingredients

  • 1 large or 2 medium eggplants, cut into large chunks and unpeeled
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 clove garlic, cut up
  • 1 stalk celery, diced
  • 2 c. tomatoes
  • 1/2 c. cracked wheat cereal

Directions

    Steam eggplants for 2 to 3 minutes.

    Saute onion, green pepper, garlic and celery in vegetable oil.

    Add tomatoes and cook briefly (5 to 10 minutes).

    Add to mixture the cracked wheat cereal and simmer 20 minutes or so until cereal is cooked.

    (Add tomatoes or tomato sauce, if liquid evaporates).
