- 1 large or 2 medium eggplants, cut into large chunks and unpeeled
- 1 onion, chopped
- 1 green pepper, chopped
- 1 clove garlic, cut up
- 1 stalk celery, diced
- 2 c. tomatoes
- 1/2 c. cracked wheat cereal
Directions

1Steam eggplants for 2 to 3 minutes.

2Saute onion, green pepper, garlic and celery in vegetable oil.

3Add tomatoes and cook briefly (5 to 10 minutes).

4Add to mixture the cracked wheat cereal and simmer 20 minutes or so until cereal is cooked.

5(Add tomatoes or tomato sauce, if liquid evaporates).
