- 1 large eggplant, sliced
- 1 c. flour
- 1 c. water
- 1 egg
- 4 oz. Parmesan cheese
- 1 small jar Ragu spaghetti sauce
- 1 tsp. salt
Directions

1Mix flour, egg, salt and water in bowl.

2Dip eggplant in flour mixture coating well.

3Fry in deep fat (oil) until brown.

4Place a layer of eggplant in deep casserole dish.

5Sprinkle with layer of Parmesan, then layer of Ragu sauce.

6Repeat layering until all eggplant (almost all) Parmesan and Ragu are used up, ending with layer of Ragu on top.

7Sprinkle with Parmesan on top.

8Bake at 350° for 30 to 45 minutes.

9Serves 4.
