- 1 or 2 medium size eggplants
- 1/2 c. oil (you may have to add more oil when frying)
- Romano cheese
- Mozzarella cheese
Directions

1Peel and slice eggplants; flour first, then dip into egg batter, then dip them in bread crumbs.

2Heat oil; fry eggplants on both sides.

3Remove from pan and place them on absorbent paper toweling.

4(This is to remove the excess oil.)
