  • 1 or 2 medium size eggplants
  • 1/2 c. oil (you may have to add more oil when frying)
  • Romano cheese
  • Mozzarella cheese

Directions

    Peel and slice eggplants; flour first, then dip into egg batter, then dip them in bread crumbs.

    Heat oil; fry eggplants on both sides.

    Remove from pan and place them on absorbent paper toweling.
  4. 4
    (This is to remove the excess oil.)
