- 1 large or 2 small eggplants (fresh is best), sliced about 1/4 inch thick
- 2 beaten eggs or a little milk
- 1 c. bread crumbs
- 1/2 tsp. salt
- dash of oregano
- 1/2 c. flour
- 1/4 c. Parmesan cheese
- Mozzarella cheese
Directions

1Peel and slice eggplants.

2Dip each slice in eggs or milk. After dipping in eggs, dip each slice in a mixture of bread crumbs, salt, oregano, flour and Parmesan cheese.

3Fry the eggplant patties in oil, covered with a lid to steam cook.

4Make sure they are cooked through, but not burnt.

5Layer in a casserole:

6tomato sauce, eggplant patties and Mozzarella cheese. Continue layering until patties are used up.

7Top with sauce and cheese.

8Heat thoroughly.
