- 1 c. stewed tomatoes
- 1/4 c. bread crumbs
- salt to taste
- oregano to taste
- pepper to taste
- 1/2 c. tomato sauce
- 3/4 c. grated Cheddar cheese (3 oz.)
- 3 Tbsp. Parmesan cheese
Directions

1Simmer eggplant in pan of boiling salted water for 10 minutes. Drain.

2Preheat oven to 350°.

3Layer ingredients in 1 1/2-quart casserole as follows:

41/2 of tomatoes, eggplant, bread crumbs, seasonings, tomato sauce and cheeses.

5Repeat layers.

6Bake, uncovered, for 20 minutes.
