- 2 medium eggplants
- 1 c. oil
- 1 jar spaghetti sauce
- 6 oz. shredded Mozzarella cheese
- 1/4 c. grated Parmesan cheese

1Preheat oven to 350°.

2Cut eggplant into thin slices.

3In 1/4 cup oil, cook eggplant until lightly browned.

4Add more oil, as needed.

5Spread 1/2 cup spaghetti sauce over bottom of a 2-quart baking dish.

6Arrange a layer of eggplant; sprinkle with cheese. Bake for 30 minutes.
