- 1 small eggplant
- 2 medium green peppers, chopped
- 2 medium onions, chopped
- 3/4 lb. sharp Cheddar cheese, sliced 1/8-inch thick
- salt
- pepper
- garlic salt
- 4 medium tomatoes, sliced
Directions

1Slice unpeeled eggplant 1/4 inch thick.

2Parboil until partially tender.

3Place layer of eggplant slices in large casserole which has been sprayed with cooking spray.

4Add layer of sliced tomatoes.

5Fill spaces with chopped green peppers and onions.

6Sprinkle lightly with each of the seasonings.

7Add layer of cheese and repeat until casserole is filled, ending with cheese. Cover; bake at 400° about 1/2 hour.

8Remove cover, reduce heat to 350° and cook until sauce thickens and is golden, about 1/2 hour. Serves 6.
