Eggplant Patties

Ingredients

  • 1 medium eggplant, pared and cubed
  • 1 1/4 c. shredded sharp processed American cheese
  • 2 Tbsp. snipped parsley
  • 1 clove garlic, minced
  • 1/8 tsp. pepper
  • 1 1/4 c. Ritz cracker crumbs (approximately 20)
  • 2 beaten eggs
  • 2 Tbsp. sliced onions
  • 1/2 tsp. salt
  • 2 Tbsp. cooking oil

Directions

    In covered saucepan cook eggplant in boiling water until tender, about 5 minutes; drain well and mash.

    Stir in crumbs, cheese, egg, parsley, onion, garlic, salt and pepper.

    Shape into 8 patties about 3-inches in diameter.

    Cook in hot oil about 3 minutes on each side until golden brown.

    Makes 4 servings.
