- 1 medium eggplant, pared and cubed
- 1 1/4 c. shredded sharp processed American cheese
- 2 Tbsp. snipped parsley
- 1 clove garlic, minced
- 1/8 tsp. pepper
- 1 1/4 c. Ritz cracker crumbs (approximately 20)
- 2 beaten eggs
- 2 Tbsp. sliced onions
- 1/2 tsp. salt
- 2 Tbsp. cooking oil
Directions

1In covered saucepan cook eggplant in boiling water until tender, about 5 minutes; drain well and mash.

2Stir in crumbs, cheese, egg, parsley, onion, garlic, salt and pepper.

3Shape into 8 patties about 3-inches in diameter.

4Cook in hot oil about 3 minutes on each side until golden brown.

5Makes 4 servings.
