Ingredients
- 1/4 c. onion, chopped
- 1/4 c. green pepper, chopped
- 1/3 c. olive oil
- 1 large eggplant
- 1 lb. ripe tomatoes
- 1/4 tsp. garlic powder
- 1/8 tsp. oregano, crushed
- 1 tsp. seasoned salt
- 1 tsp. salt
- 1 c. cooked rice
- 1 c. Cheddar cheese, grated
- 1 c. mushrooms (if desired)
Directions

1Brown onion and pepper slowly in olive oil.

2Peel eggplant and tomatoes; cut into 1-inch cubes.

3Add to onion and pepper; sprinkle seasonings.

4Mix. Spoon about 1/3 mixture into 2-quart baking dish. Top with 1/2 rice.

5Repeat layers; top with eggplant.

6Cover and bake for 45 minutes, or until eggplant is tender.

7Remove; sprinkle with cheese.

8Bake for 15 minutes, uncovered, or until cheese has melted.

9Serves 6.
