Ingredients

  • 1 1/2 lb. ground beef, drain fat
  • 1 pkg. yellow rice mix (I got a 39 cent pkg.)
  • 1 can Cheddar cheese soup
  • 1/3 c. milk
  • 1 can stewed tomatoes
  • 1 pkg. chili mix
  • 1/2 c. onions, chopped
  • 1/2 c. olives, sliced or chopped (black or green)
  • 1 c. lettuce, shredded
  • 1 or more fresh tomatoes, chopped
  • 1/2 c. grated cheese (or more if you like)
  • crushed Fritos (as many as you like)

Directions

    Brown meat; add salt, pepper and garlic salt or powder to taste. Add canned tomatoes and chili mix. Cook yellow rice according to package directions. Mix meat mixture and rice.

    Put in large Pyrex dish. Heat cheese soup and milk; pour over meat and rice. Mix onions, olives, lettuce, fresh tomatoes and grated cheese together. Sprinkle over casserole. Top with crushed Fritos.
