Ingredients

  • 2 lb. ground beef
  • 1 qt. tomatoes
  • 1 pkg. chili mix
  • 1 box yellow rice mix
  • 1 can Cheddar cheese soup
  • 1/2 c. milk
  • 1/2 c. chopped onion
  • 1/2 c. grated cheese
  • 1/2 c. chopped olives
  • 2 c. shredded lettuce
  • Fritos
  • 1/2 tsp. salt

    Cook ground beef.

    Add salt, chili mix and tomatoes.

    Simmer until almost dry. Cook rice as directed on package.

    Put a layer of meat and tomato mixture in a large serving dish and cover with cooked rice.

    Add the rest of the tomatoes and meat.

    Heat the can of Cheddar cheese soup and milk and spread over the meat mixture. Sprinkle chopped olives, grated cheese and onion on top along with 2 cups crushed Fritos. Decorate with lettuce and tomato wedges. This complete meal, which serves 10, can be prepared in about 30 minutes.
