- 1 lb. lean ground beef
- 1 medium onion, chopped
- 1 pkg. mushrooms, chopped
- 1 can chopped or sliced olives
- 1 pkg. Monterey Jack cheese, grated
- 1 can stewed tomatoes
- 1 c. salsa
- 1 pkg. corn tortillas
Directions

1In nonstick pan, brown onion and saute mushrooms.

2Brown ground beef, adding garlic to taste.

3Add olives, salsa and stewed tomatoes.

4Let cook until you feel flavors are well blended.

5In oblong pan, place one layer of tortillas; top with meat mixture and cheese.

6Keep repeating until pan is full.

7Cover with foil and bake at 350° for 40 to 45 minutes.

8Cut into squares and serve with tossed salad.
