  • 1 onion, chopped
  • 1 can tomatoes
  • 1 (10 oz.) can enchilada sauce
  • 1 can sliced olives and liquid
  • 1 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/8 tsp. pepper
  • 8 corn tortillas
  • 1 small carton cottage cheese
  • 1 egg
  • 1 block each: Cheddar cheese and Jack cheese
